How can I add or edit fields in contacts?

You should open a contact and either click on the “Add field” button or on the “Edit fields” one.

    Easy to add a field in Contacts, but how to connect that field to an exported field from the exported contacts of an email program?

    There's an option to map fields if you're importing your contacts from a CSV file.
